The dried root of Dioscorea opposita is a starchy tuber with a mild, slightly sweet taste. This yam variety is prized for the region of growth in Henan due to its unique soil properties that produce the best yams.
It's well known for it's digestive health benefits and overall metabolism balance. Commonly used in soups and herbal medicine try some with your next stew or soup!
To prepare, the dried ingredient needs to be pre-soaked for at least 30mins until soft. When cooking, treat it like a potato or other starchy produce. The resultant texture should be soft and full of flavour it's absorbed from whatever soup base it's added to. Cook until fork-tender.
