Ingredients (serves 4–6):
- 1 whole chicken ~1.5kg (washed and cleaned)

- Jujube (red dates) x3-5 dates
- Poria x6-10 cubes or 6-10g
- Cordyceps flower x 15g (a good handful)
- Ophiopogon root x5g
- Astragalus x3-5 slices or 10-15g
- Ficus root x10g

Angelica root x2-3 slices or 6-10g
- 3–5 fresh ginger slices
- Salt, to taste (add later when serving)
- Water (enough to cover the chicken in the pot)
Method:
- Weigh out herbs into a plate and set aside.
- Wash and clean the whole chicken; place in a large stock pot.
- Add ginger slices and fill with water until the chicken is fully covered.
- Bring to a boil on high heat; simmer for a few minutes and remove any scum.
- Reduce to medium heat; add the herbs and cook for 10 minutes.
- Lower heat and slow cook gently for up to 5 hours.
- Add salt to taste before serving.
Tips for the Perfect Herbal Soup
